Officially opened on 29th February 1968 when legendary scaler of heights Sir Edmund Hillary climbed its 165-metre exterior, the Summit has gone the way of celebrities worldwide, with a stylish make-over that means she is settle to dazzle for her 40th birthday.
Serving more than 3.5 million customers since opening its doors, the Summit Restaurant is perched on level 47 of one of Sydney's most beautiful skyscrapers – Harry Seidler's imposing Australia Square.
Revolving one metre per minute, the Summit has travelled the equivalent of two times the earth's circumference and is the world's largest revolving restaurant.
Floor-to-ceiling windows showcase a slowly revolving 360-degree panorama that takes in the city skyline in 105 breathtaking minutes. On a clear day you can see for 80 kilometres, which is as close to "forever" as the curvature of the earth allows.
The restaurant was originally launched by renowned restaurateur Oliver Shaul, before being taken over by Accor Hotel Group in 1998 and given a multimillion dollar renovation and being relaunched with another prominent Sydney restaurant figure, Anders Ousback, at the helm. July 2007 saw the Summit returned to private hands with British-trained restaurateur and celebrity chef Michael Moore taking control.
Moore brings to Summit two decades of international experience in acclaimed restaurants such as Sir Terence Conran's Bluebird Gastrodome in London, and successful stints at top Sydney establishments Wildfire, Bennelong and Pruniers. The recipient of a string of Chef's Hats from The Sydney Morning Herald Good Food Guide, Michael also enjoys national celebrity recognition thanks to regular cooking and lifestyle segments on Fresh with the Australian Women's Weekly and Mornings with Kerri–Anne, both on the Nine Network.
"The Summit holds a special place in the mind of anyone who has dined here and there are millions of happy memories within these walls," said Michael Moore. "I am excited to celebrate this landmark, reaching 40 is truly a great achievement in such a volatile industry."
Since taking over the reigns of the Summit, Michael has brought a rigorous approach to the venue's five-star location, interweaving his stylish food with the visual experience of the restaurant. Each dish is built around a feature ingredient, Moore adeptly adding accents of flavour in supporting rather than conflicting roles. As an example, Michael's flash-seared hiramasa kingfish with roasted blue pumpkin, black cabbage, candied mandarin, marinated fetta and sage nut butter is an artful blend of flavours and colours to delight the palate.
Michael has also catered to the culinary whims of a long list of celebrities over his twenty-year international career from Nicole Kidman and Ringo Starr to Joan Collins Sir Paul McCartney and Farah Fawcett, to name a few.
His creative dishes have also inspired culinary legend Alain Ducasse, who asked Moore for his recipes and Hollywood's Dustin Hoffman who was so captivated by one of Michaels crab linguine dishes that he went into the kitchen to watch how Michael prepared it.
Naturally, the Summit also attracts a broad range of high-profile guests from Will Smith, Jean Paul Cartier, Tommy Lee Jones, Jackie Collins, David Walliam from Little Britain, to regulars Sarah Murdoch and Bec and Lleyton Hewitt.
