Molecular Gastronomy meets Molecular Mixology

360 BAR AND DINING team in Sydney Tower have taken the techniques of 'spherification' sweeping the restaurant scene to new highs in Sydney.

Molecular Mixology - the art of cocktail making - has been influenced by what's been happening in the food scene in molecular gastronomy. Synonymous with the famed world's best restaurant - elBulli in Spain, the innovation has seen foams, gels and mists added to menus and cocktail lists worldwide. Leading the way in Australia in El Bulli's 'sferificación' technique are the international bar team at 360 BAR AND DINING.

The introduction of 'Ravioli' (named so by El Bulli due to the sensation in the mouth being like liquid ravioli) to 360's signature list was the result of collaboration between the kitchen and head Bar Tender, Sam Egerton.

Bar Manager, Quinton Seeto, says "360's bar team have taken some of elBulli restaurant's most famous techniques and applied them to our creation of drinks to bring you some of the most unique and cutting edge cocktails in Sydney. Using techniques like Spherification we are able to create garnishes that change the way drinks are being made and consumed."

The 360 Signature list provides a virtual cocktail degustation.

Try The Supernova Martini that introduces Ravioli Spheres to a variation of a lychee martini. The lychee infused ravioli sphere adds an extra dimension to the cocktail experience. Enjoy the flavour burst first or as a palette cleanser at the end of the drink followed by an accompanying shot glass of sparkling wine to compliment the medley of flavours and textures.

If you prefer something savoury, the Thai Mai Shu is a taste explosion. Apple and chilli ravioli added to the glass heightens the lemongrass and basil gin-based cocktail or consume the ravioli like an oyster to feel the texture of chilli on the tongue. To cleanse the palette the Bond inspired Miss Pennyapple is a refreshing gin based cocktail served with kiwi & apple infused spheres or the dessert like Banana Nanana is a fun and fruity creamy cocktail with a sublime banana flavour explosion.

360 BAR is the highest revolving bar in the southern hemisphere.
