Swissôtel Sydney will be presenting traditional Swiss Food infused with the contemporary tastes and influences of the Ticino region from 25 July - 4 August, 2008.

The Swiss-Ticino buffet will be prepared by our culinary team, led by our very own Swiss National, Martin Kaspar, CheF&B Director.

Ticino is a Tuscan paradise where Swiss-Germans arrive in their thousands to sit beneath vine shaped terraces, to bask in the warmth of the Mediterranean weather and enjoy the flavours of Swiss-Italian cuisines.

Ticino is renowned for its magnificent produce, with fresh delicacies such as polenta, chestnuts and mushrooms - these ingredients will take centre-stage during the food promotion.

Over 80kg of fresh chestnuts will be brought in for the promotion, and roasted in our opened wood-fired oven. And of course, there is the traditional Ticinese cooking style to enjoy during the promotion. Braised beef 'Brasato al merlot' or rabbit stew - slowly cooked and ever so tender that it falls off the bone and melts in your mouth.

During this special event, Swissôtel will replicate the style of Ticino Grotto, of cascading vines and hanging grapes in the restaurant. 'Alba Trio', a popular band from Switzerland has been invited by our joint partner Swiss International Air Lines to perform during the Swiss-Ticino food promotion.

Buffet lunch $38 per person
Buffet dinner $55 per person

Cheese Fondue is served separate from the buffet and is available during dinner serving.
