Chefs Go Wild at The Fireplace. Dine During June - If You're Game!

The Fireplace at Hyatt Regency Sanctuary Cove is gearing up for a wild month of dining with the inclusion of game meat dishes on the menu during the month of June.

The choice of these exotic game meat dishes will change each week and will complement the existing first class menu.

If you would like an encounter with an entrée of slow roasted confit of rabbit with persimmon chutney on caramelised endives, or you want to get up close to a main serve of grilled kangaroo loin with beetroot, sweet potato chops and pesto dressing; then venture to The Fireplace.

Executive Chef, Sheldon Tan said The Fireplace team is looking forward to showcasing their creativity with these new dishes during June.

"Diners are getting more adventurous and with wild boar, rabbit, venison, quail, ox and kangaroo on the menu we're confident our regular diners and hotel guests will enjoy the succulent flavours of these quality Australian meats," said Sheldon.
