As most would know, besides being short tempered throughout the world most chefs follow recipes to the letter on every aspect. Italian chefs however, have been brought up to create and produce from the heart rather than the textbook. "The right amount of" or "a handful of" is virtually non-existent. This has come to be for two reasons, initially because of the confidence shown from people who work on a daily basis & because no two chefs can agree on the ingredients, let alone the preparation in creating a dish.
